CHILLED CHEESECAKE <3

 Difficulty level:  2
(level 1 being the easiest - level 5 being the hardest)

This lovely cheesecake recipe has been tried-and-tested, confirmed to succeed. In fact, everyone I passed the recipe to has succeeded beautifully, even on the first try! (: Its amazingly sweet, so some of you might want to cut down on the sugar. 

(I'll upload a picture for this entry when I do this again, its kinda pricey you see.. :D)

Crust

1 cup (abt 5 pieces)   Digestive Biscuits (I recommend 8 pieces of biscuits for the crust lovers) 

80g   Melted Butter (use abt 120g of butter for increased biscuits usage)

Crush the biscuits and mix it with melted butter and line the base of baking mould. (I use one with diameter of 20cm). Chill in the fridge while you work on the cream part. 

Cream

2 x 250g  Philadelphia cream cheese blocks (NTUC is selling them at abt 5 buck each)
3/4 cup    Sugar
3 tsp        Gelatine mixed with 1/4 cup of boiling water
250g        Cream (Nestle brand - you will need 2 can, 1 can is only 170g)
2 tbsp      Lemon Juice

1. Mix the cheese with sugar until smooth
2. Add cream, gelatine, lemon juice and mix well
3. Pour into tray and chill till set  * I use the freezer and love my cake frozen solid hard, so i leave it to freeze usually overnight. So depending on preference, timing for it to set depends (: 


All ingredients can be found at NTUC, the whole recipe should cost you about 15 dollars. Considering that one pays 6 bucks for a SLICE of cheesecake at TCC (and the likes), this is a great deal! (: have fun!!
